Underwater Elections

Misleading title? Perhaps... but then again, perhaps not.
The 2008 Great American Seafood Cook Off is now open and you can go and vote for your favorite edible underwater creature (a.k.a. seafood) recipe!

There are five dishes presented for voting. The recipe and a delicious-looking photo are available for each to help you judge which gives off the best underwater goodness aura!
After looking at each of them, I have decided that my favorite would be the Mississippi Redfish Courtboullion with Seafood Dirty Rice by Chef John Currence from Mississippi. I had a hard time deciding between the abovementioned dish and the Pan Roasted Glazed Rockfish with Peas and Carrots, but in the end, I’m a sucker for dishes presented in a bowl and for rice mixed with a bunch of stuff, so I decided to go for the Mississippi dish. Just looking at the picture makes me want to try it! But trying it would involve preparing the dish, and as much as I want to do that, I can’t right now. Maybe I’ll do that sometime in the not so faraway future... Well, if ever I do try it though, there’s only one thing about it I would change and that would be removing the chicken livers from the seafood dirty rice. Why? I’m really just not into livers. That’s all there is to it. I guess that would change the taste somewhat, but even if I didn’t change the recipe, I doubt I could actually make it as good as the original anyway, so, changing it can’t really do much more damage, I suppose!
All the dishes featured in the cook off were domestic, sustainable seafood recipes. Aside from being more easily available, using domestic seafood also guarantees freshness and therefore also guarantees a more tasty meal.
